Crystal clear noodle like strands of spaghetti squash
gently grace this unique and flavorful hearty barley miso, mineral rich wakame
sea vegetable, immune system boosting flavorful shiitake mushroom, naturally
sweet pancreas healthy yellow onion, strengthening green leek, sweet orange
kabocha squash, fresh green pea, and stimulating ginger root soup. Garnished
with fresh green chives.
BROWN RICE AND HATO MUGI RISOTTO SMALL___ LARGE___Ah, the calming and balancing whole grain dish!
Strengthening medium grain brown rice is slowly cooked with the wild Japanese seed/grain
called “hato mugi”, known in the Orient for calming the nervous system and
purifying the blood. Hato mugi lends itself perfectly to the formation of a
sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich
yellow miso, rice and soy milk, mirin, a naturally fermented brown rice cooking
“sherry”, pungent and flavorful organic capers, slices of cremini mushrooms to
add richness, flavor, and creaminess, and a sliced green scallion garnish.
BAKED TOFU WITH
KOMBU LEEK SAUCE SMALL___ LARGE___
Delicious
high protein, low fat pieces of tofu, are marinated with naturally fermented
shoyu soy sauce, baked to nice brown flavorful perfection, then draped with a
sauce of brightly sauteed leek, slivers of naturally chelating kombu sea
vegetable, good for the stomach and pancreas yellow onions and green cabbage,
magically medicinal shiitake and cremini mushrooms, and circulation stimulating
fresh ginger, cooked in their natural juices, and thickened with digestion strengthening
and alkalizing kuzu root.

BASIL SCENTED CHICKPEAS SMALL___ LARGE___Natural vegetable powder
multi colored whole grain therefore high in complex carbohydrate energy giving
and fun to eat bowtie noodles, are tossed with protein and mineral rich
chickpeas cooked with kombu sea vegetable to aid in digestion, are decorated
with pancreas healthy colorful red onions marinated in alkalizing umeboshi
plum, bitter green good for the liver rappini, potent and energizing “able to

A whole wheat pastry flour,
corn oil, and brown rice syrup based light and rich cake, is soaked in a potent
mixture of all natural “grain” coffee (roasted barley, chicory, rye), then
layered with a rich and creamy amasake brown rice milk, calcium rich tofu,
alkalizing and digestion promoting kuzu, sea vegetable mineral rich agar agar,
vanilla, mirin and almond crème filling, and dusted with cocoa powder, to
create a healthy version of this classic Italian dessert.
